Easy Marinated Garlic Basil Chicken

Looking for a new way to switch up and elevate your weekly chicken meal? Set and forget your chicken overnight in a marinade of olive oil, basil, and garlic. This recipe from ThatDudeCanCook is simple and utilizes kitchen staples you may already own. A mortar and pestle is recommend but you can also blend or just mash the marinade ingredients together as well as you can. I personally remade this recipe and it turned out great! The marinade is simple but it still adds that extra depth of flavor you wouldn’t get otherwise. Certainly a must try!

Ingredients

  • 5-7 cloves of peeled garlic, chopped

  • 1/2 tsp kosher salt, with the garlic

  • 10 sprigs of fresh thyme, stripped

  • 2 oz fresh basil leaves

  • 1 tsp chili flakes

  • 1/3 cup extra virgin olive oil

  • 2 lbs chicken breast

  • Fresh lemon and salt, to finish

Instructions

  1. Smash together garlic, basil, chili flakes and salt in mortar and pestle. Add olive oil and mix together thoroughly

  2. Beat the chicken to create an even surface throughout. (I would consider this a recommendation)

  3. Place the chicken in bowl and add marinade. Massage marinade into the chicken until fully coated

  4. Cover bowl with plastic wrap and let sit for up to 24 hours. The closer to 24 hours the better, however, 1-2 hours is fine.

  5. Cook the chicken depending on cut and thickness of chicken.

  6. ThatDudeCanCook does 2 minutes - quarter turn - 2 minutes - flip - 2 minutes - quarter turn - 2 minutes and done. Total of 8 minutes start to finish

Cozy Pezole Verde

Pozole or posole is a traditional Mexican soup that can be enjoyed any time of the year. Great for feeding a crowd or making for yourself, this dish will familiarize you with traditional Mexican cuisine if you haven’t been hooked already. This recipe comes from Ethan Chlebowski, who has one of my favorite cooking YouTube channels. The list of ingredients and instructions may seem overwhelming but the process is quite simple, and the out come is well worth it. The only ingredient you may need to go to the store for is hominy, a type of corn kernel used for pozole dishes, which you can usually find at Walmart.

Ingredients

  • 12-15 tomatillos, husk removed

  • 3-4 poblano peppers, cut in half

  • 2 serrano peppers, cut in half

  • 1 large yellow onion, finely chopped

  • 6 garlic cloves, finely minced

  • Vegetable oil

  • 1 whole chicken, cut into 10 pieces

  • 3g ground cumin

  • 2g ground coriander

  • 2g chili powder

  • 1800g (64 oz) chicken stock

  • 850g (2 15-ounce cans) hominy/pozole, rinsed*

  • Coarse kosher salt

  • Fresh ground black pepper

Instructions

  1. Turn the oven on broil at 500 F.

  2. Spread tomatillos, poblano and serrano peppers on a large tin foil rimmed baking sheet. Broil for 5 minutes until blackened and charred. Let cool 10 minutes.

  3. Meanwhile, finely chop the yellow onion and garlic cloves. Add them to a bowl.

  4. Finely chop the roasted tomatillos, poblanos, and serrano peppers and add them to the bowl.

  5. Next, heat a thin layer of vegetable oil in a large Dutch oven over medium high heat.

  6. Liberally season the chicken pieces with salt and pepper. Add them to the dutch oven and brown on all sides. Set the browned chicken pieces on a plate and turn the heat to medium low.

  7. Add the bowl of chopped vegetables, the ground spices and a pinch of salt. Cook, stirring occasionally, for 10-15 minutes. Set the heat to low and cook for another 15-20 minutes until caramelized and cooked down.

  8. Pour in the chicken stock and add in the browned chicken pieces. Bring the soup up to a simmer and let cook, uncovered, for 20-30 minutes. Remove the chicken pieces and shred the chicken.

  9. Return the chicken to the soup and add in the hominy*.

  10. Taste it. Add salt and pepper as needed.

  11. Serve in bowls and top with pickled red onion, sliced jalapeno, crema, radish, cilantro, cotija, fresh squeezed lime, or any other desired toppings.

Refreshing Shirazi Salad


Shirazi salad is a healthy and refreshing Iranian salad made with simple and fresh ingredients. This recipe is typically a side dish but definitely delicious enough to eat as your main meal. You can easily pick up the listed ingredients in the fresh section on your next grocery trip. Even better, this only takes about 5 minutes to make!

Ingredients

  • 3 cucumbers chopped

  • 3 tomatoes chopped, seeded

  • ½ red onion chopped

  • ¼ green pepper seeded and chopped (optional)

  • 2 tablespoons chopped cilantro

  • 2 tablespoons chopped parsley

  • ½ teaspoon crushed mint

Dressing

  • 3 tablespoons extra virgin olive oil

  • 3 tablespoons fresh squeezed lime juice

  • ½ teaspoon kosher salt

  • ¼ teaspoon freshly cracked black pepper

Instructions

  1. Combine dressing ingredients into large bowl and whisk until emulsified

  2. Remove seeds from vegetables to remove extra moisture

  3. Finely chop vegetables and add to the bowl with dressing

  4. Mix and serve!
